Nicholas Poulmentis, a 50-year-old chef from New York City, has a remarkable story that intertwines his culinary talent with a profound personal transformation. Originally hailing from the picturesque Greek island of Kythira, Nicholas has not only achieved accolades such as becoming a Food Network Chopped Champion but has also cooked for President Barack Obama. However, his culinary success was shadowed by unhealthy eating habits that led to a significant health scare.

WEIGHT GAIN was a gradual process for Nicholas, stemming from a departure from the healthy eating practices he embraced during his childhood. Growing up in Greece, he cherished the simplicity of fresh, seasonal ingredients and active living. Memories of catching seafood with his father and enjoying meals prepared with care were central to his upbringing.

After relocating to New York in 2012, he found himself trapped in a cycle of unhealthy habits, leading to a peak weight of 260 pounds, far above his usual 160. A near-fatal heart incident eight years ago served as a wake-up call, prompting him to reflect on his life choices and reconnect with his roots.

Determined to reclaim his health, Nicholas shifted his focus back to the Mediterranean lifestyle. He began to simplify his diet, incorporating grilled fish, fresh vegetables, and wholesome ingredients reminiscent of his childhood meals. This return to his culinary heritage not only aided in his weight loss journey--shedding 75 pounds in two years--but also reignited his passion for cooking.

Incorporating regular movement into his routine was equally vital. Nicholas embraced a consistent fitness regimen, favoring activities that felt natural and enjoyable, much like the active lifestyle he experienced growing up in Kythira. His commitment to fitness included daily cardio sessions and strength training, emphasizing longevity and well-being over mere weight loss.

The culmination of his journey is the upcoming opening of his restaurant, Kythira NP, in Soho in spring 2026. This establishment aims to celebrate his heritage through thoughtful, traditional cooking that honors the flavors of his home island. Nicholas envisions a space where guests can experience the joy and connection that food can foster.

As he reflects on his transformation, Nicholas encourages others embarking on similar journeys to embrace the foods that resonate with them. By prioritizing fresh, high-quality ingredients and a balanced lifestyle, he believes anyone can find joy and health in their culinary practices.
