Chefs Justin Ahn and Alex McCoy first launched Alfie's in 2016 as a pop-up serving northern Thai cuisine, using the format to refine recipes, train staff, and test the concept before opening a permanent space.

After years of moving between cities including New York, London, and D.C., the team has now settled into a 25-seat restaurant in Georgetown. The new location keeps the energy of the original pop-up alive with a compact setup, a menu shaped by seasonal local ingredients, and a service style that stays flexible rather than overly formal.

McCoy says the restaurant's approach is rooted in adaptability: dishes can shift daily depending on what local purveyors deliver, from rockfish and soft shell crab to foraged asparagus and morel mushrooms. The wine program follows the same philosophy, with a strong focus on Virginia producers and bottles priced to encourage discovery rather than hesitation.

Alfie's also offers a small wine club with limited memberships, designed to create a more personal, community-driven experience for regular guests. That intimate model reflects the restaurant's broader identity: a neighborhood spot where the chefs remain closely connected to the dining room and the kitchen.

Early demand has been strong, with reservations filling quickly as diners respond to the restaurant's blend of craftsmanship, local sourcing, and small-scale hospitality. Alfie's shows how a pop-up can mature into a lasting concept without losing its original spark.
