Taco Frito Pie

This dish is a delightful fusion of casserole and nachos, inspired by the walking taco concept. While you can use any type of chip, Fritos are particularly effective due to their sturdiness, making them perfect for this hearty meal. Unlike traditional nachos, you'll need a fork for this one.

If you have leftovers, they reheat beautifully in an air fryer.

Ingredients:

  • 1 lb ground beef (or turkey/chicken for a leaner option)
  • 1 diced yellow onion
  • 1 packet taco seasoning
  • 1 can (15 oz) pinto beans, drained and rinsed
  • 1 can (19 oz) red enchilada sauce
  • 2 packages (9 oz each) Fritos (regular size)
  • 8 oz shredded cheese (colby jack or Mexican blend)

Directions:

Directions:
