Kennemer emphasizes a strong commitment to a farm-to-table philosophy, operating its own farm, Rigger Hill Farms, located upstate. The menu is thoughtfully designed around seasonal produce, showcasing the best of what nature has to offer.

In the kitchen, Chef Kennemer employs innovative techniques, such as charring large cabbage halves, which he describes as an emerging flavor trend. The charred cabbage is then juiced to create a unique sauce for a delectable lamb dish. The lamb necks sourced from Colorado undergo a meticulous curing process before being smoked at low temperatures and simmered in the rich cabbage juice. Diners are invited to create their own gyros at the table, complete with pickles made from the farm's vegetables and fresh flatbread.

Additionally, whole ducks from the Hudson Valley are dry-aged for two weeks and featured in various dishes, including a confit duck leg served with beans inspired by traditional French cassoulet. The beans are soaked and slow-simmered with aromatic ingredients, ensuring a flavorful experience.

Chef Kennemer's culinary philosophy revolves around supporting local farmers, embracing seasonal eating, and minimizing waste. He believes that this approach not only strengthens food culture but also fosters sustainability and longevity in the dining experience.
