This unique establishment, which opened its doors in March 2023, is quickly becoming a must-visit for food enthusiasts across Texas.

Chef-owner Michael Anthony Serva, hailing from a close-knit Italian family in northern California, brings a rich culinary heritage to Bordo. With a great-grandfather as a butcher and a father who worked as both a butcher and fishmonger, Serva's passion for Italian cuisine runs deep. His culinary journey has taken him from prestigious restaurants in San Francisco to Marfa, where he was drawn by an opportunity to lead the kitchen at Cochineal. It was there he met his wife and business partner, Hannah Texie Bailey.

Inspired by his love for authentic Italian flavors and armed with a wood-fired pizza oven, Serva envisioned creating a personal, laid-back deli and bakery that would celebrate his Italian roots in the Texas desert. Bordo is not just a restaurant; it is a community hub, deeply integrated into Marfa's fabric. The staff, many of whom are locals, contribute to the restaurant's warm atmosphere, which resonates with the spirit of the town.

Inside, Bordo exudes a cozy charm with its adobe facade and minimalist decor, inviting guests to enjoy a culinary experience that feels both intimate and vibrant. Serva often greets patrons personally, fostering a sense of connection that enhances the dining experience.

At Bordo, the menu features an array of signature sandwiches, each crafted with care. The bread, a chewy Puglian-style creation, serves as the foundation for delectable offerings like the Cashiola, layered with artisanal meats and house-made stracciatella. Other highlights include the indulgent Morty Melt, showcasing pan-seared mortadella and melted mozzarella, and rotating pasta specials that reflect seasonal ingredients.

Beyond sandwiches, Bordo offers house-made gelato and sorbetto in seasonal flavors, as well as a selection of natural wines and aperitivos. The deli also supports local initiatives, reinforcing its commitment to the community.

For those planning a visit, Bordo operates Thursday through Sunday from 11 a.m. to 3 p.m., with no reservations required. It's advisable to arrive early to secure a spot in the bustling dining area.
